Eggs Florentine

Ingredients:
- 4 Egg;poached;
- 4 English Muffin;toasted;slice
- 4 Cheddar Cheese;slices
- 3/4 c Mayonnaise
- 3/4 c Sour Cream
- 1 tb Mustard
- 1 tb Lemon Juice
- 1/8 ts Cayenne
- 1/2 c Spinach;cooked,squeezed dry
Method:
- Preheat oven to 350°F
large roasting pan
- Blend last 6 ingredients in a blender or processor.
- Gently heat resultant sauce in sauce pan.
- Place cheese slices on toast, broil them till cheese melts.
- To serve, place poached eggs on the muffins and top with sauce.
